What I see as most useful for a demo would be
  * a set of questions, large enough to have some interest
  * an interface for creating a substantial number of (say 1000) enquiries and storing them passively as standing enquiries
  * an interface (could be the same) for 
    * creating active enquiries
    * receiving responses
    * modifying the active enquiry
  * until the tester is able to find some correspondences

This, I imagine, will be enough to give people a feel of the power of the system.
